Run #8 - Started 1/6/02

  1. 3 cans Albertson's 12 fl oz 100% frozen grape juice
  2. 2 spn Acid blend
  3. 2 spn yeast nutrient
  4. Warm water added to the 3-gallon mark.
  5. Lalvin RC-212 yeast
  6. SG ~ 1.08

Water was warm. Fermentation went very straight forward. The wine continues to be very cloudy. No matter how long I let it sit, it still drops sediment in the serving glasses.

1/29/02 - My roommates are enjoying it. We had two decanters full. They notices the sediment but were more than happy to have the free drink.

Bought a new bucket. Racked the wine into the new bucket. Racked again the day after. Sediment seems to be falling very quickly.

New theory: If the concentration of sludge is high, it drops out. But if there is already sludge on the bottom, it cannot fall as quickly. Will rack more thoroughly in the future.

2/28/02 - Wine very drinkable and very clear. Good stuff.

3/25/02 - Had the last glass tonight. It was so fierce I had to pour it down the sink (the first of many no doubt.)

Maybe it oxidized, maybe it was aging. Either way it was too tough to drink. Let us hope the next is of kinder nature. That or we drink it quick enough that we won't realize it. Yes... Probably the latter.
